Ingredients

  • baking potato
  • 2 to 3 sticks butter
  • 1 onion, finely chopped
  • 2 stalks celery, finely chopped
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • salt and pepper to taste

Instructions

  1. Combine the chopped onion, celery, oregano, garlic powder, salt, pepper, and butter in a bowl and cook until the celery is tender.
  2. Cut the baking potato into large slices, making several cuts that are deep enough to create pockets.
  3. Spoon the cooked herb mixture into the slices of the potato, filling each slit generously.
