Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 2 tablespoons toasted sesame seed
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon herb of your choice (e.g., sage, dill weed, oregano, sweet basil, parsley, marjoram, summer savory, rosemary, coriander, or cardamom)
  • 1 cup 100% bran cereal
  • 1 cup skim milk
  • 1 egg

Instructions

  1. Stir together the all-purpose flour, whole wheat flour, baking powder, salt, sugar, toasted sesame seed, dry mustard, and herb of your choice.
  2. Set aside the dry ingredients.
  3. In a large mixing bowl, combine the bran cereal and skim milk.
  4. Let stand for 2 minutes.
  5. Add the egg and butter or margarine, blending well.
  6. Add the flour mixture, stirring only until combined.
  7. Coat a 12-muffin tin with nonstick cooking spray or line with muffin cups.
  8. Fill each muffin cup two-thirds full with the muffin batter.
  9. Bake at 400°F (200°C) for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
