Herb Roasted Lamb

Ingredients

  • 1 leg of lamb
  • 1/2 tsp. garlic slivers
  • 1 tsp. salt
  • 1/2 tsp. coarse black pepper
  • 1/2 tsp. ginger
  • 1 bay leaf, crumbled
  • 3/4 tsp. thyme
  • 1/2 tsp. sage
  • 1/2 tsp. marjoram
  • 1 1/2 Tbsp. soy sauce
  • 1 Tbsp. vegetable oil

Instructions

  1. Preheat oven to 300°.
  2. Cut small slits in the lamb and insert garlic slivers with tip of knife.
  3. Combine remaining ingredients and rub thoroughly over and into meat.
  4. Roast on a rack in a roasting pan, uncovered.
  5. Cook 18 minutes per pound for medium. Let stand 20 minutes, then carve.
