Ingredients

  • beef
  • mustard
  • flat leaf parsley
  • olive oil

Instructions

  1. Heat oven to 350 degrees.
  2. In bowl, combine first 4 ingredients.
  3. Rub mixture over beef.
  4. Place beef on rack set in roasting pan.
  5. Roast 1-1/2 hours, or until thermometer inserted in beef reads 145 degrees for medium-rare.
  6. Transfer to serving plate.
  7. Let sit 15 minutes before slicing.
