Ingredients

  • 2 Tbsp. salt
  • 1/2 cup olive oil
  • 6 Tbsp. chopped fresh thyme
  • 2 tsp. finely chopped garlic
  • fresh thyme sprigs
  • 2 lb. fresh linguine
  • 4 tsp. grated lemon peel

Instructions

  1. Bring 8 quarts of water to a boil; add 2 tablespoons salt and the linguine.
  2. Cook until pasta is al dente, tender but still firm to the bite. Fresh pasta will cook in 2 to 3 minutes; dried pasta about 10 minutes.
  3. Drain the linguine and transfer to a large bowl.
  4. Toss with 1/2 cup olive oil, chopped fresh thyme, grated lemon peel, and finely chopped garlic. Garnish with fresh thyme sprigs if desired.
