Ingredients

  • 1 1/4 cup milk
  • 1 1/4 cup water
  • 1/4 cup sugar
  • 1 cup uncooked rice
  • 2 tablespoon soft butter or margarine
  • 1/2 teaspoon almond flavoring
  • 1 cup whipping cream
  • 1 tablespoon sugar
  • 1/2 cup blanched slivered almonds

Instructions

  1. In a large saucepan, combine the milk, water, and 1/4 cup sugar; bring to a boil over high heat.
  2. Stir in the uncooked rice.
  3. Reduce heat; simmer, uncovered, about 30 to 35 minutes or until rice is tender and liquid is absorbed.
  4. Remove from heat; stir in softened butter and almond flavoring until well combined.
  5. Cool the mixture.
  6. Whip the whipping cream; beat in 1 tablespoon sugar.
  7. Fold the whipped cream and slivered almonds into the pudding.
  8. Cover and chill for at least 2 hours before serving.
  9. Serve with raspberry jam or sauce.
