Ingredients

  • 1 peck shelled corn
  • 1 (1 lb.) box baking powder

Instructions

  1. Put the shelled corn and baking powder in a large, clean wash pot.
  2. Fill the pot with water and build a fire around it.
  3. Bring to a boil and keep adding water as it cooks.
  4. Stir the corn frequently to prevent sticking and cook until tender.
  5. Remove the corn from the pot and drain the water.
  6. Put the corn in enamel pans and wash until the water is clear.
  7. Remove black eyes while washing the corn.
  8. Pack the cleaned corn into sterilized jars and process in a pressure canner for 20 minutes at 10 pounds pressure.
  9. Do not freeze the canned hominy.
