- Put the shelled corn and baking powder in a large, clean wash pot.
- Fill the pot with water and build a fire around it.
- Bring to a boil and keep adding water as it cooks.
- Stir the corn frequently to prevent sticking and cook until tender.
- Remove the corn from the pot and drain the water.
- Put the corn in enamel pans and wash until the water is clear.
- Remove black eyes while washing the corn.
- Pack the cleaned corn into sterilized jars and process in a pressure canner for 20 minutes at 10 pounds pressure.
- Do not freeze the canned hominy.
