Ingredients

  • 5 oz. lye
  • 6 qt. cold water
  • 5 qt. shelled corn
  • 5 Tbsp. salt

Instructions

  1. Dissolve the lye in the cold water.
  2. Stir in the shelled corn and let stand for 15 hours.
  3. Drain off the lye water and put the corn in a sack.
  4. Rub and wash the corn in the sack through running water to remove hulls.
  5. Take the corn out of the sack and cook for 3 or 4 hours or until tender.
  6. Change the water 2 or 3 times while it is cooking.
