Honey Wheat Germ Bread

Ingredients

  • 2 c. unbleached flour
  • 1/2 c. dry milk
  • 3 Tbsp. wheat germ
  • 2 tsp. salt
  • 2 pkg. yeast
  • 2 c. hot water
  • 1/4 c. vegetable oil
  • 1/4 c. honey
  • 3 c. whole wheat flour

Instructions

  1. In a large mixer bowl, measure 1 cup unbleached flour and stir in dry milk, wheat germ, salt, yeast and hot water.
  2. Add vegetable oil, honey and 2 cups whole wheat flour.
  3. Beat 3 minutes at medium-high speed with mixer.
  4. Stop mixer.
  5. Add 1 cup whole wheat flour and 1/2 to 1 cup unbleached flour, 1/2 cup at a time, first with a spoon and then by hand.
  6. Knead 5 to 8 minutes until smooth and elastic.
  7. Put dough back into mixing bowl and pat top with greased fingertips.
  8. Let rise 1 hour or until double.
