Hot Red Potato

- cut the potato into med size pieces place in a glass dish.
- chop onion in med size pieces, slice hot pepper into thin round slices.
- Cut bell pepper into chunks -- put all these into glass pan.
- Place enough water in bottom of dish to make a thin layer so the potato will not stick.
- spinkle seasonings over potato and toss to coat.
- Note the crushed red pepper gets pretty hot so use a little at first until you find your degre of hotness.
- Place a clear wrap over top of glass dish and microwave for 20 min until potato is tender.
- Take out, toss to mix, spray top with pam.
- place in 350 degree oven for 20 mins or until it starts to brown.
