Hungarian Pepper Dish

Ingredients

  • 2 Tbsp. oil
  • 1 medium onion, peeled, sliced, separate into rings
  • 1 lb. green peppers, cleaned, sliced
  • 3/4 lb. tomatoes, peeled, quartered
  • 1/2 tsp. sugar
  • 2 tsp. Hungarian sweet paprika
  • dash of cayenne pepper
  • salt and pepper

Instructions

  1. Heat oil in heavy skillet.
  2. Add onion; cook over moderate heat until wilted.
  3. Add green peppers; cook until crisp tender.
  4. Add remaining ingredients; cook covered over low heat 10 minutes, stirring occasionally.
  5. Taste for seasoning.
  6. Serve in vegetable dishes.
  7. Yields 4 servings.
