  • 2/3 c. milk, room temperature
  • 2 c. flour
  • 1/3 c. lukewarm water

Instructions

  1. Add yeast to the sponge, lukewarm water, honey or maple syrup, salt, and 1 cup of flour.
  2. Beat with a whisk for 3 minutes.
  3. Add remaining flour until the dough pulls away from the sides of the bowl.
  4. Turn onto a floured surface and knead for about 5 minutes.
  5. Slam the dough hard against the work surface.
  6. Set aside, uncovered, for 5 to 10 minutes.
  7. Knead again before shaping and baking.
