A refreshing Italian fruit salad with sweet pineapple, mandarin oranges, cherries, and a creamy, citrus-flavored sauce, perfect for summer gatherings and light desserts.

Ingredients

  • 1/2 box soupettes
  • 20 oz. chunk pineapple (save juice)
  • 2 cans mandarin oranges (save juice)
  • 1/2 jar maraschino cherries, cut in half
  • 12 oz. Cool Whip
  • 3/4 cup sugar
  • 1 tablespoon lemon juice
  • 2 eggs, beaten
  • 1 tablespoon flour
  • 1 teaspoon salt

Instructions

  1. Cook soupettes according to directions, then rinse and cool.
  2. In a pan, bring to a boil the juice from pineapple and mandarin oranges, sugar, flour, eggs, salt, and lemon juice, making a gravy-like mixture.
  3. Mix in the cooked soupettes and let the salad refrigerate overnight to meld flavors.
