Ingredients

  • 2 limes
  • 1 to 2 fresh jalapenos, seeded and finely chopped
  • 12 oz. bag fresh cranberries
  • 1/4 cup chopped cilantro leaves
  • 1 tablespoon sugar

  1. Cut limes into 6 pieces each, including rind, and chop finely.
  2. Add cranberries to a food processor and process very briefly.
  3. Combine the processed cranberries and lime pieces in a plastic container.
  4. Add finely chopped jalapenos, chopped cilantro leaves, and sugar to the container.
  5. Mix well to combine all ingredients.
  6. Chill the salsa for 15 minutes up to overnight before serving.
  7. Serve as an appetizer with baked tortilla chips, over baked fish or chicken, or as a relish.
