Jason's Pot roast

Ingredients

  • 7 lb roast
  • 3 can Beer
  • 2 packages Onion soup mix
  • 1 tbsp roasted red pepper and garlic spice
  • 1 medium onion, sliced

Instructions

  1. Place roast in a roasting pan that has a tight fitting cover.
  2. Combine the remaining ingredients in a bowl and mix well.
  3. Then pour over the roast.
  4. Liquid should be a minimum of 1/4 way up the roast.
  5. Place roast in a preheated oven at a temperature of 325F.
  6. (Cooking time is 25 mins/pound) Cook for 3 hours and an internal temperature of 130F.
  7. Transfer roast to a plater and cover loosely with tinfoil and let rest.
  8. For the gravy, Pour all the liquid, mushrooms and onions into a pot and bring to a rolling boil.
  9. Add cornstarch according to its directions to achieve desired thickness.
