Ingredients

  • 5 (3 oz.) packages Jell-O Brand gelatin
  • 1 package lime
  • 1 package orange
  • 1 package raspberry
  • 1 package lemon
  • 1 package black cherry
  • 1 cup boiling water (for each package of Jell-O)
  • 1/4 cup cold water (for each package of Jell-O)

Instructions

  1. Line the bottom of a 9-inch spring-form pan with a circle of aluminum foil.
  2. Insert the bottom into the ring of the pan.
  3. Cut a strip of wax paper to fit all around the inside of the ring and rise a bit higher than the top. Stand the wax paper all around inside the ring until the paper meets. Scotch tape it together.
  4. Dissolve each package of gelatin separately using 1 cup of boiling water and 1/4 cup of cold water.
  5. Place the first bowl of Jell-O in the refrigerator to thicken (not set).
  6. When thickened, remove from the refrigerator and beat with an electric mixer until fluffy and about doubled in volume.
  7. Pour the whipped Jell-O into the prepared spring-form pan.
  8. Refrigerate to chill until firm but not set.
  9. Repeat this process with each flavor, allowing each to thicken while the previous layer is being beaten.
  10. Once all flavors are layered, place the pan in the refrigerator overnight to set.
  11. Next day, remove the outer ring first, then gently slide a knife between the paper and the cake to remove the wax paper.
  12. Lift the cake off the pan bottom and place it on a serving plate.
  13. Prepare one package of Dream Whip according to the directions and frost the cake.
  14. Refrigerate until ready to serve.

Tips & Substitutions

For a more vibrant cake, use fresh fruit purees instead of water to dissolve the gelatin. You can also substitute the Dream Whip with whipped coconut cream for a dairy-free option. Make sure each layer is thick enough before adding the next to prevent mixing of colors. Chill the cake overnight for the best texture and flavor.

Serving Suggestions

This colorful cake is a showstopper at parties and pairs beautifully with Tangy Tomato Salad Dressing for a refreshing contrast. Serve with a dollop of whipped cream or a scoop of vanilla ice cream to enhance the sweetness. For an extra touch, garnish with colorful sprinkles or fresh fruit.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep the cake covered to prevent it from drying out. If you need to reheat, let it sit at room temperature for about 30 minutes before serving; avoid microwaving as it can alter the texture.

Frequently Asked Questions

Can I make this cake in advance?

Yes, this Jello Rainbow Cake can be made a day or two in advance. Just ensure it is well covered and stored in the refrigerator. The flavors will meld beautifully, and it will be ready to serve when your guests arrive.

What can I use instead of Jell-O?

If you're looking for a healthier option, you can use natural fruit juices and agar-agar as a gelatin substitute. This will still give you a colorful layered effect while adhering to vegan recipes.

How do I prevent the layers from blending?

To prevent blending of layers, ensure that each layer is adequately thickened before adding the next one. Allow sufficient chilling time between each layer, and if necessary, place the pan in the freezer for short intervals to speed up the thickening process.
