Ingredients

  • 1 lb butter
  • 20 cups fresh cut sweet corn kernels

Instructions

  1. Place butter in a roasting pan and bake in a 325°F oven until melted.
  2. Stir in the fresh cut sweet corn kernels and cream.
  3. Bake uncovered for 75 minutes or until the corn is tender, stirring occasionally.
  4. Immediately place the roaster in ice water to cool quickly, stirring frequently.
  5. Transfer the cooled corn to heavy-duty plastic freezer bags and freeze.
  6. May be frozen for up to 1 month.
  7. To serve, reheat the frozen corn.
