Ingredients

  • 12 lb. turkey
  • 12 ti leaves, deveined
  • 2 pieces banana leaf
  • 3 to 4 Tbsp. Hawaiian salt

Instructions

  1. Rinse, drain, and dry the turkey.
  2. Line a large roasting pan with heavy-duty aluminum foil.
  3. Arrange 12 deveined ti leaves, radiating from the center of the pan.
  4. Place a banana leaf on top of the ti leaves.
  5. Put the turkey on top of the banana leaf and ti leaves.
  6. Rub the turkey generously with Hawaiian salt and liquid smoke on the inside and outside.
  7. Fold the ti leaves and banana leaf around the turkey to enclose it.
  8. Seal the package well with foil.
  9. Roast in a 350°F (175°C) oven for 4 hours.
  10. Lower the temperature to 325°F (160°C) and roast for an additional 1 to 2 hours.
  11. Remove from oven, shred the turkey, and serve.
