Kamut Fruit Salad

Ingredients

  • 1 cup Dry Kamut Berries
  • 3 cups Water
  • 1/4 cups Honey
  • 1 Tablespoon Lime Juice
  • 1/2 teaspoons Pure Vanilla Extract
  • 2/3 cups Cherries, Halved And Pitted
  • 2/3 cups Fresh Blueberries
  • 2 whole Mangoes, Peeled, Seeded And Cubed
  • 3 whole Kiwi Fruits, Peeled And Chopped
  • 1/2 Tablespoons Fresh Spearmint Leaves, Chopped

Instructions

  1. Place kamut in a saucepan and cover with the water. Put the lid on and place pan in the refrigerator overnight. When ready to cook, place saucepan on the stove top and bring to a boil. Then reduce heat to medium and simmer for 40 minutes, or until water is absorbed and kamut is chewy. Remove from heat and place into a large bowl.
  2. Combine honey, lime juice and vanilla in a small bowl. Microwave for 15 seconds or until warm. Drizzle over the kamut and toss to coat. Place kamut in the refrigerator for one hour.
  3. Prior to serving, add in the other types of fruit and mint. Toss to combine.
