Ingredients

  • 3 eggs
  • 1 teaspoon salt
  • 1 tablespoon water
  • about 2 cups flour

Instructions

  1. Beat eggs until light.
  2. Add salt and water to the eggs and beat again until light.
  3. Add flour, 2 tablespoons at a time, mixing with a fork until a dough ball forms.
  4. Divide the dough into two portions and roll each out.
  5. Add flour as needed to prevent sticking.
  6. Roll the dough on a towel to dry slightly.
  7. Cut the dough into noodle strips.
  8. Cook the noodles in boiling broth or water for 3 to 8 minutes.
  9. Can be frozen for later use.
