Keer Rice Pudding

Ingredients

  • 1 cup basmati rice
  • 1 1/2 cups water, plus more for steeping
  • 2 quarts half-and-half
  • 1 cup sugar
  • 1 cup raisins
  • 1 teaspoon ground cardamom

Instructions

  1. Steep the rice in a bowl of water for 20 minutes.
  2. Drain and rinse the rice.
  3. Add the 1 1/2 cups of water and the rice to a medium sauce pot.
  4. Bring the water to a boil over medium heat, cover, then reduce the heat and simmer for 15 to 18 minutes.
  5. In a large saucepan combine the half-and-half, the sugar, raisins and cardamom.
  6. Add the rice and bring to a gentle simmer, uncovered, for 25 minutes.
  7. Remove from the heat, let cool and scoop into small bowls.
  8. Serve sprinkled with pistachios and enjoy!!
