Ingredients

  • 5 to 6 medium potatoes, peeled and grated
  • 1 small onion or 1/2 medium onion, diced
  • 1/2 green pepper, diced (optional)
  • 2 cups cubed Velveeta cheese
  • 1/2 cup milk
  • water (to cover potatoes)
  • salt to taste

Instructions

  1. Peel and grate the potatoes into a large pot.
  2. Dice the onion and green pepper.
  3. Add water to the pot, enough to cover the potatoes.
  4. Bring the mixture to a boil, then reduce to a simmer and cover.
  5. Cook for 20 to 30 minutes or until the potatoes are tender.
  6. Add the cubed Velveeta cheese and milk to the pot.
  7. Cook for an additional 10 minutes, stirring until the cheese melts completely.
  8. Season with salt and pepper to taste before serving.
