Layer Casserole

Ingredients

  • 1 c. uncooked rice
  • 1 c. frozen mixed vegetables
  • 2 (8 oz.) cans tomato sauce
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 1/2 lb. uncooked ground beef
  • 8 half strips bacon

Instructions

  1. In bottom of 3-quart baking dish put rice.
  2. Layer with vegetables; sprinkle with salt and pepper.
  3. Add one 8 ounce can tomato sauce mixed with 1/2 can water.
  4. Add onion and green pepper.
  5. Top with layer of ground beef.
  6. Sprinkle with salt and pepper.
  7. Pour over 8 ounce can tomato sauce mixed with 1/4 can water.
  8. Top with bacon strips.
  9. Bake covered for 1 hour in 350° oven.
  10. Uncover; bake 30 minutes longer.
