Ingredients

  • 12 oz. semi-sweet chocolate chips
  • 14 oz. can Eagle Brand sweetened condensed milk
  • 2 tsp. vanilla extract
  • 1 cup white confectioners deluxe baking pieces
  • 1 Tbsp. peppermint extract
  • 1 drop green food coloring (optional)

Instructions

  1. In a heavy saucepan over low heat, melt the semi-sweet chocolate chips with 1 cup of condensed milk.
  2. Add vanilla extract to the melted mixture.
  3. Spread half of the chocolate mixture into a wax paper-lined 9-inch pan.
  4. Chill for 10 minutes or until the layer is firm.
  5. Keep the remaining chocolate mixture at room temperature.
  6. In a saucepan over low heat, melt the white confectioners' baking pieces with the remaining condensed milk.
  7. Stir until the mixture is thick.
  8. Add peppermint extract and green food coloring (if using); stir well.
  9. Spread this mint layer over the chilled chocolate layer.
  10. Chill for another 10 minutes or until firm.
  11. Spread the reserved chocolate mixture on top of the mint layer.
  12. Chill for 2 hours or until completely firm before serving.
