Layered Mint Chocolate

- In a heavy saucepan over low heat, melt the semi-sweet chocolate chips with 1 cup of condensed milk.
- Add vanilla extract to the melted mixture.
- Spread half of the chocolate mixture into a wax paper-lined 9-inch pan.
- Chill for 10 minutes or until the layer is firm.
- Keep the remaining chocolate mixture at room temperature.
- In a saucepan over low heat, melt the white confectioners' baking pieces with the remaining condensed milk.
- Stir until the mixture is thick.
- Add peppermint extract and green food coloring (if using); stir well.
- Spread this mint layer over the chilled chocolate layer.
- Chill for another 10 minutes or until firm.
- Spread the reserved chocolate mixture on top of the mint layer.
- Chill for 2 hours or until completely firm before serving.
