Leftover Ham & Cabbage Casserole

Ingredients

  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 large sweet onion
  • 2 tablespoons garlic, minced
  • 3 cups cabbage, thinly sliced
  • 2 1/2 cups ham, cubed
  • 8 small potatoes, scrubbed and quartered
  • 1/2 cup white wine
  • 1 tablespoon dried parsley
  • salt and pepper

Instructions

  1. Saute the onion & cabbage in the melted butter, stir fry until translucent.
  2. Add potatoes, garlic, wine salt & pepper, stir.
  3. Add parsley & ham, mix well, cover.
  4. Simmer 20 minutes or until the potatoes are tender.
  5. Serve.
