Ingredients

  • 1 1/2 cups sugar
  • 2 small eggs
  • lump of butter
  • 2 lemons
  • 1 lemon rind, grated

Instructions

  1. Cook all ingredients, except butter, in a pot on low heat until thick.
  2. Add butter and beat until smooth and creamy.
  3. Use enough icing to cover 5 thin layers of cake.
  4. Ice the first layer and beat the icing.
  5. Ice each additional layer and beat the icing each time.
  6. Allow the icing to air dry on the cake before covering.
