Lemon Glazed Cheesecake

Ingredients

  • 2 c. graham cracker crumbs
  • 6 Tbsp. melted butter
  • 2 Tbsp. sugar
  • 3 (8 oz.) pkg. cream cheese
  • 3/4 c. sugar
  • 3 eggs
  • 1/4 c. lemon juice
  • 2 tsp. grated lemon rind
  • 2 tsp. vanilla

Instructions

  1. Preheat oven to 350°.
  2. Combine first 3 ingredients thoroughly. Press crust evenly onto bottom and sides of buttered 9 x 3-inch spring-form pan.
  3. Bake 5 minutes.
  4. Cool.
  5. Beat cream cheese until soft.
  6. Add sugar, blending thoroughly.
  7. Add eggs, one at a time, beating well after each.
  8. Mix in lemon juice, rind and vanilla. Blend well.
  9. Turn into spring-form pan.
  10. Bake 35 minutes.
