Ingredients

  • 2 c. graham cracker crumbs
  • 1 c. sugar
  • 3 eggs
  • 7 1/2 Tbsp. lemon juice
  • 1 large can evaporated milk

Instructions

  1. Pour the evaporated milk into a bowl and partially freeze it.
  2. Line a 9 x 13-inch pan with graham cracker crumbs.
  3. Separate the eggs into yolks and whites.
  4. In one bowl, beat the egg yolks with sugar and 3 tablespoons of lemon juice.
  5. In a separate bowl, beat the evaporated milk until thick and then add the remaining lemon juice.
  6. In a third bowl, beat the egg whites until stiff peaks form.
  7. Gently fold the egg yolk mixture into the beaten egg whites.
  8. Then fold in the milk mixture.
  9. Pour the combined mixture into the prepared pan and freeze until set.
