Ingredients

  • 8 turkey cutlets, flattened 1/4-inch
  • 8 oz. semisoft garlic and herb cheese, cut into 8 chunks
  • 1/2 cup flour
  • 3 eggs
  • 1 tablespoon water
  • 3/4 cup Italian flavored bread crumbs

Instructions

  1. Lay the turkey cutlets flat with the narrow end towards you.
  2. Spread the garlic and herb cheese on each cutlet within 1/4 inch of the edges.
  3. Fold up the long sides of each cutlet about 1/4 inch to enclose the filling.
  4. Press the edges into the cheese to seal.
  5. Roll up each cutlet from the narrow end to form a roulade.
  6. Coat each roulade with flour, dip in beaten eggs with water, then roll in Italian flavored bread crumbs.
  7. Arrange the roulades seam side down in a greased 13 x 9-inch baking pan.
  8. Chill the pan for 30 minutes.
  9. Heat the oven to 425°F (220°C).
  10. Drizzle melted butter over the roulades.
  11. Bake for 25 to 30 minutes until juices run clear when pierced.
