Lemon Macaroon Pie

Ingredients

  • 3 eggs
  • 6 Tbsp. unsalted butter
  • 1 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 3 Tbsp. fresh lemon juice
  • 1 c. fine macaroon coconut
  • 1 (9-inch) unbaked pie crust

Instructions

  1. Preheat oven to 350 degrees. In a large mixing bowl, beat eggs slightly. Add the melted butter, sugar, salt, vanilla and lemon juice. Beat until well blended. Stir in coconut.
  2. Pour the filling into the crust. Bake for 50 to 55 minutes or until the top is browned and the filling is set.
