Ingredients

  • 1 tablespoon grated lemon peel

Instructions

  1. Bake the yellow cake in a jelly roll pan (15 1/2 x 10 1/2 x 1-inch) according to the package directions.
  2. Allow the cake to cool completely.
  3. Prepare the lemon pudding according to the package directions and stir in the grated lemon peel.
  4. Let the lemon pudding cool.
  5. Prepare the frosting mix according to the package directions.
  6. Spread the lemon pudding evenly over the cooled cake.
  7. Spread the frosting over the lemon pudding layer.
  8. Sprinkle shredded coconut on top of the frosting.
