Ingredients

  • 16 lemons (juice and zest)
  • 2 cups sugar
  • 24 egg yolks
  • 1 cup whipped cream
  • 8 egg whites
  • pinch of salt

Instructions

  1. Juice and zest 16 lemons to obtain the required lemon juice and zest.
  2. In a heatproof bowl, whisk together the egg yolks and sugar until smooth.
  3. Gradually add lemon juice and zest to the egg yolk mixture, whisking constantly.
  4. Cook the mixture over low heat, stirring constantly, until thickened, about 10-15 minutes.
  5. Remove from heat and let it cool slightly.
  6. Gently fold in the whipped cream until well combined.
  7. In a separate clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  8. Carefully fold the egg whites into the lemon mixture to incorporate air and achieve a light, airy mousse.
  9. Divide the mousse into serving dishes or a large serving bowl.
  10. Refrigerate for at least 2 hours before serving to set.
  11. Optionally, top with additional whipped cream or lemon zest before serving.
