Ingredients

  • 2 1/4 cups sugar
  • 2 1/4 cups water
  • 3/4 teaspoon salt
  • 3/4 cup cornstarch
  • 1/2 cup water
  • 6 beaten egg yolks
  • 3/4 cup lemon juice

Instructions

  1. Combine sugar, water, and salt in a saucepan.
  2. Mix together cornstarch and 1/2 cup water, then add to the saucepan.
  3. Cook until the mixture thickens.
  4. In a separate bowl, combine beaten egg yolks, lemon juice, butter, and lemon peel.
  5. Add the egg yolk mixture to the thickened saucepan and cook until thick again, stirring often.
  6. Add 2 tablespoons of prepared meringue to the filling and pour into a baked pie shell.
  7. Top with remaining meringue and bake at 325°F for 10 to 15 minutes until browned on top.
