Lemon Poached Salmon

Ingredients

  • 4 (6 oz.) fresh or frozen salmon steaks
  • 4 c. water
  • 1/3 c. lemon juice
  • 1 small onion, sliced
  • 1/4 c. chopped celery
  • 1/2 tsp. salt
  • 1/8 tsp. freshly ground pepper
  • lemon wedges
  • tartar sauce

Instructions

  1. Thaw salmon, if frozen.
  2. In large skillet, combine water, lemon juice, onion, celery, salt and pepper.
  3. Bring to boil; simmer 5 minutes.
  4. Add salmon; simmer, covered, 7 to 10 minutes or until fish flakes easily with a fork.
  5. Remove salmon from liquid with spatula.
  6. Chill or serve hot.
  7. Serve salmon with lemon wedges.
  8. If desired, top salmon with tartar sauce and garnish with fresh dill weed.
  9. Makes 4 servings.
