Lemon Pudding Roll

Ingredients

  • 3 eggs
  • 1 c. sugar
  • 1/4 c. water
  • 1 tsp. vanilla
  • 1 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 pkg. lemon pudding & pie filling

Instructions

  1. Beat eggs 5 minutes;
  2. add sugar gradually until light and fluffy.
  3. Add water & vanilla.
  4. Mix well.
  5. Add baking powder and salt to flour.
  6. Add dry ingredients to egg mixture.
  7. Pour into a greased, foil-lined cookie sheet pan.
  8. Bake at 375° for 12 to 15 minutes.
  9. Loosen edges and roll into a dish towel sprinkled with powdered sugar.
  10. Prepare pudding according to directions on box and cool.
  11. Unroll and spread evenly with lemon filling.
  12. Roll up and chill.
