Lemon Pudding Roll

Instructions
- Beat eggs 5 minutes;
- add sugar gradually until light and fluffy.
- Add water & vanilla.
- Mix well.
- Add baking powder and salt to flour.
- Add dry ingredients to egg mixture.
- Pour into a greased, foil-lined cookie sheet pan.
- Bake at 375° for 12 to 15 minutes.
- Loosen edges and roll into a dish towel sprinkled with powdered sugar.
- Prepare pudding according to directions on box and cool.
- Unroll and spread evenly with lemon filling.
- Roll up and chill.
