Ingredients

  • 3 cups milk
  • 1/2 cup rice
  • 2 eggs
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/4 cup lemon juice
  • 2 teaspoons grated lemon rind
  • 1/8 teaspoon cream of tartar

Instructions

  1. Cook the rice in the milk until tender.
  2. Beat the egg yolks and add 3/4 cup of sugar, salt, lemon juice, and lemon rind; combine with the cooked rice.
  3. Beat the egg whites until soft peaks form, then add the cream of tartar and 1/4 cup of sugar; beat until stiff.
  4. Pile the egg whites on top of the rice mixture and bake in a moderate oven for 20 to 25 minutes until lightly browned.
