Ingredients

  • 4 mallards
  • salt
  • pepper
  • 1 stick butter

Instructions

  1. Wash the ducks inside and out and dry completely.
  2. Season the ducks generously with salt and pepper.
  3. Melt butter in a roasting pan and brown the ducks on all sides on the stovetop.
  4. Pour lemon juice into the cavities of the ducks and place lemon rinds around the sides.
  5. Cover and roast in a 300°F (150°C) oven until tender, about 2 to 3 hours.
  6. Remove the meat from the bones and pour gravy from the pan over the meat before serving.
