  • 1 c. confectioners sugar
  • 2 tsp. instant espresso or regular instant coffee
  • 4 Tbsp. rum or brandy
  • 2 egg whites
  • 2 Tbsp. chopped almonds

Instructions

  1. Whip the heavy cream and confectioners sugar until stiff.
  2. In a separate bowl, dissolve the instant coffee in the rum.
  3. Gently fold the coffee-rum mixture into the whipped cream.
  4. Beat the egg whites until stiff.
  5. Fold the egg whites into the cream mixture.
  6. Spoon into fluted cupcake holders or parfait glasses until filled.
  7. Sprinkle the tops with chopped almonds and place a cherry on each.
  8. Cover with plastic wrap and foil, then freeze until solid.
  9. Remove from freezer just before serving.
  10. Can also be made in a cake pan lined with ladyfingers around the outside.
