Lemon Roasted Red Potatoes

Ingredients

  • 2 tablespoons lemon juice
  • 4 teaspoons olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • 6 small red potatoes (about 3/4 pound), quartered

Instructions

  1. Preheat oven to 450°. In a medium bowl, combine lemon juice, oil, thyme, garlic salt and pepper. Add potatoes, toss to coat. Place in a greased 8-in. square baking dish. Bake, uncovered, until potatoes are tender, about 40 minutes, stirring occasionally.
