Lemon-Thyme Trout

- Preheat barbecue or gas grill on high for 10 minutes.
- In a small mixing bowl, combine margarine, white wine, chopped shallot or onion, lemon juice, and lemon peel.
- Spray two 16-inch long pieces of heavy-duty foil with nonstick cooking spray.
- Arrange a trout half, skin side down, in the center of each piece of foil.
- Spread each trout with half of the margarine mixture.
- Top each with half of the thyme sprigs, lemon slices, and pepper.
- Enclose the fish in foil, folding edges to seal.
- Set packets on the grill rack and cook for 8 to 10 minutes.
- Remove from grill and let stand for 2 minutes before serving.
