Lemony New Potatoes
Bright and tender new potatoes coated in lemon butter and chives, perfect as a fresh side dish for springtime meals or any casual gathering.

- In a large saucepot, heat 1 inch of water to boiling.
- Add the new potatoes, cover, and cook until tender, about 15 to 20 minutes.
- Turn off the stove top and pour the potatoes into a colander to drain.
- Transfer the potatoes into a serving dish and cover with foil.
- In a skillet, combine butter, lemon juice, snipped chives, and salt on the stove top.
- Just prior to serving, turn on the heat and stir until the butter has melted.
- Remove the foil from the potatoes and pour the lemon butter over them to coat.
- Serve immediately.
