Ingredients

  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 cup orzo
  • 2 large lemon peel strips
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Bring chicken broth, olive oil, and 1/2 cup water to a simmer in a medium saucepan. Stir in orzo and lemon peel strips; cook 12 minutes or until liquid is absorbed and orzo is tender. Remove lemon peel; stir in lemon juice, salt, and pepper. Garnish, if desired.
