Ingredients

  • 6 oz brown lentils
  • 1/4 t salt
  • 4 1/2 t olive oil
  • 1 lg onion
  • 1 T cumin
  • 1/2 tsp grd cinnamon
  • 1/2 c long rain rice
  • 2 c water
  • pepper

Instructions

  1. Soak lentils in water for 1 hr. Drain place in pan, cover w/water by 2" & bring to boil. Add salt & simmer 30 mins til just about tender. Cook onion (in fry pan) w/o.o. til begins to color. Add cumin & cinn. Stir, & add rice. Stir to coat w/oil & add water & lentils w/liquid plus s & p to taste. cook 45 mins (for brown rice)
