Lime Jelly

Instructions
- Grate rind from enough limes to measure 2 tablespoons and set aside.
- Squeeze juice from enough limes to measure 3/4 cup; strain to remove seeds and pulp.
- Combine lime rind, juice, and water in a 4-quart saucepan.
- Stir in sugar.
- Bring to a full rolling boil over high heat, stirring constantly.
- Add 1 to 2 drops of green liquid food coloring, if desired.
- Quickly stir in liquid fruit pectin.
- Return to a full rolling boil and boil for 1 minute, stirring constantly.
- Remove from heat and skim off foam with a metal spoon.
- Pour hot jelly into sterilized jars, filling to 1/4-inch from the top.
- Wipe jar rims.
- Immediately cover with metal lids and screw on bands.
- Process jars in boiling water bath for 5 minutes, then cool on wire racks.
