  • 1 large or 2 small bay leaves
  • Salt and freshly ground pepper to taste
  • 3 garlic cloves, peeled and chopped
  • 1 can quartered artichoke hearts, drained
  • 1 can black olives, drained and sliced
  • 1 (28 oz.) can imported canned tomatoes, drained and coarsely chopped
  • 1 lb. imported linguine

Instructions

  1. Cook the shrimp in 1/4 cup olive oil in a skillet with thyme, basil, parsley, bay leaves, salt, and pepper until they turn pink and are slightly firm.
  2. Remove the shrimp from the pan and set aside.
  3. In the same pan, heat another 1/4 cup olive oil and add garlic, sauté briefly.
  4. Add artichoke hearts and sauté briefly.
  5. Add chopped tomatoes and cook over medium heat until the sauce thickens.
  6. Return the cooked shrimp and any remaining olive oil to the pan, cooking just until the shrimp are heated through.
