Loaded Mashed Potato Pie

Ingredients

  • 3 cups Leftover Mashed Potatoes
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1/4 cups Sour Cream
  • 1 whole Eggs
  • 2 Tablespoons Bacon
  • 2 Tablespoons Cheese
  • 2 Tablespoons Green Onions Or Chives

Instructions

  1. 1. Warm leftover mashed potatoes in the microwave. Stir in 1 egg. Stir in sour cream, if desired.
  2. 2. Heat extra virgin olive oil in skillet over medium heat.
  3. 3. When oil is hot, gently spoon in potatoes to cover the entire skillet. Flatten and spread out with a spoon. Let simmer until the bottom begins to turn golden, about 15 minutes.
  4. 4. Add 'toppings' (bacon, cheese, green onions) on one half of the potatoes. Gently fold one half of the potatoes over the other. Let simmer for 5 minutes or so.
  5. 5. Turn over and let the second side get crispy!
  6. 6. When you are ready to serve potatoes, slide the 'omelet' out onto a plate. Slice into wedges and serve on the side!
