Loaded Mashed Potato Pie

- 1. Warm leftover mashed potatoes in the microwave. Stir in 1 egg. Stir in sour cream, if desired.
- 2. Heat extra virgin olive oil in skillet over medium heat.
- 3. When oil is hot, gently spoon in potatoes to cover the entire skillet. Flatten and spread out with a spoon. Let simmer until the bottom begins to turn golden, about 15 minutes.
- 4. Add 'toppings' (bacon, cheese, green onions) on one half of the potatoes. Gently fold one half of the potatoes over the other. Let simmer for 5 minutes or so.
- 5. Turn over and let the second side get crispy!
- 6. When you are ready to serve potatoes, slide the 'omelet' out onto a plate. Slice into wedges and serve on the side!
