Ingredients

  • 2 garlic cloves
  • 5 walnuts
  • 2 1/2 cups fresh herbs (basil, parsley, cilantro, lemon balm)
  • juice of 1/2 lemon
  • 1 tablespoon red miso paste
  • 1 to 3 tablespoons tomato paste
  • a little walnut or olive oil

Instructions

  1. Add garlic, walnuts, fresh herbs, lemon juice, miso paste, and tomato paste to a processor and blend.
  2. Add water gradually until the desired consistency is reached.
  3. Adjust seasoning to taste and spread on sandwiches and pizza.
  4. Mix with some pasta cooking water and serve with pasta.

For a creamier texture, consider adding a small amount of nutritional yeast or avocado. If you don’t have walnuts, pine nuts or pecans can be great substitutes.
