Ingredients

  • 2 eggs
  • 3/4 tsp. salt
  • 1/2 tsp. paprika
  • 1/4 tsp. dry mustard
  • 3 Tbsp. lemon juice
  • 1/2 cup skim milk
  • 1 Tbsp. vegetable oil

Instructions

  1. Beat eggs, salt, paprika, and dry mustard in the top of a double boiler.
  2. Gradually add lemon juice and milk, stirring constantly. Cook until thick, at least 3 minutes.
  3. Remove from heat and stir in vegetable oil.
  4. Pour into a jar, cover, and refrigerate.
  5. Stir before serving.
