Low-Fat Quick Muffins
Ingredients
- 1 3/4 c. low-fat baking mix (such as Pioneer) ⓘ
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg ⓘ
- 1/8 tsp. ground cloves ⓘ
- 1/2 c. egg substitute or 2 egg whites ⓘ
- 1/2 c. brown sugar ⓘ
- 1 Tbsp. vegetable oil ⓘ
- 1/4 c. applesauce ⓘ
- 3/4 c. milk ⓘ
- 3/4 c. of 2 of the following: berries, apples, raisins, nuts, dried cranberries, etc. ⓘ
Instructions
- Mix first 8 ingredients. Add milk and mix. Blend in fruit and nuts. Spoon into muffin cups and bake at 400° for 18 to 20 minutes.
