Ingredients

  • 1 1/4 cups graham cracker crumbs
  • 2 tablespoons sugar
  • 3 tablespoons margarine, melted
  • 2 (8 oz.) packages cream cheese, softened
  • 1 cup sugar
  • 2 teaspoons grated lemon peel

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Stir together graham cracker crumbs and 2 tablespoons sugar.
  3. Mix in melted margarine thoroughly.
  4. Press mixture evenly into the bottom of a 9-inch spring-form pan.
  5. Bake for 10 minutes, then cool.
  6. Reduce oven temperature to 300°F (150°C).
  7. Beat the cream cheese in a large mixing bowl until smooth.
  8. Gradually add 1 cup sugar, beating until fluffy.
  9. Add grated lemon peel and vanilla extract.
  10. Beat in eggs, one at a time.
  11. Pour the cream cheese mixture over the cooled crust.
  12. Bake for 1 hour or until the center is firm.
  13. Cool to room temperature, then chill for at least 3 hours before serving.
